# Japanese Potato Puree 胡萝卜和黄瓜土豆泥

#### Carrot and Zucchini Mashed Potatoes 胡萝卜和黄瓜土豆泥

**English Version**

**Carrot and Zucchini Mashed Potatoes Recipe**

**Ingredients:**

* Potatoes
* Carrots
* Zucchini
* White onion
* Ham
* Sugar
* Salt
* White vinegar
* Egg yolk

**Instructions:**

1. **Prepare the Potatoes:** Cut the potatoes into chunks and boil them with a small amount of sugar until they are about 70% cooked. Drain the water, leaving a little bit behind.
2. **Prepare the Onion:** Soak the white onion in water for five minutes to remove any bitterness.
3. **Prepare the Vegetables:** Slice the carrots and zucchini thinly. Sprinkle them with salt and squeeze out the excess water.
4. **Prepare the Ham:** Dice the ham and set it aside.

**Steps:**

1. **Mash the Potatoes:** Mash the cooked potatoes.
2. **Mix Onion:** Squeeze out the water from the soaked onion and add it to the mashed potatoes. Add 1 teaspoon of white vinegar and a pinch of salt.
3. **Prepare Egg Mixture:** Add raw egg yolk and mix well. Add a little white vinegar and a pinch of salt.
4. **Combine Ingredients:** Mix all the ingredients together until well combined.

#### 胡萝卜和黄瓜土豆泥

**中文版本**

**材料:**

* 土豆
* 胡萝卜
* 黄瓜
* 洋葱
* 火腿
* 糖
* 盐
* 白醋
* 鸡蛋黄

**步骤:**

1. **准备土豆：** 将土豆切成块，放入水中煮，加入少量糖，煮到七分熟，倒掉部分水，留一点水。
2. **准备洋葱：** 将洋葱泡水五分钟去味。
3. **准备蔬菜：** 将胡萝卜和黄瓜切成薄片，撒盐抓水。
4. **准备火腿：** 将火腿切丁备用。

**制作步骤:**

1. **土豆捣泥：** 将煮好的土豆捣成泥。
2. **洋葱混合：** 挤干洋葱水分，放到土豆泥里面，加1勺白醋和少许盐。
