Carrot and Zucchini Mashed Potatoes Recipe
Ingredients:
Potatoes
Carrots
Zucchini
White onion
Ham
Sugar
Salt
White vinegar
Egg yolk
Instructions:
Prepare the Potatoes: Cut the potatoes into chunks and boil them with a small amount of sugar until they are about 70% cooked. Drain the water, leaving a little bit behind.
Prepare the Onion: Soak the white onion in water for five minutes to remove any bitterness.
Prepare the Vegetables: Slice the carrots and zucchini thinly. Sprinkle them with salt and squeeze out the excess water.
Prepare the Ham: Dice the ham and set it aside.
Steps:
Mash the Potatoes: Mash the cooked potatoes.
Mix Onion: Squeeze out the water from the soaked onion and add it to the mashed potatoes. Add 1 teaspoon of white vinegar and a pinch of salt.
Prepare Egg Mixture: Add raw egg yolk and mix well. Add a little white vinegar and a pinch of salt.
Combine Ingredients: Mix all the ingredients together until well combined.
