Prepare the Chicken:
Start by breaking down the chicken. The first and key step is to remove the wishbone. Then, separate the legs, wings, and finally, the breast meat, leaving only the chicken carcass.
Blanch the Chicken:
Bring a pot of water to a boil, adding cooking wine and ginger. Blanch the chicken pieces in the boiling water for two minutes. After blanching, discard the hot water and immediately transfer the chicken to cold water to cool.
Simmer the Soup:
Add corn, carrots, and sliced ginger to the pot along with the blanched chicken. Season with salt and MSG. Let it simmer for over half an hour until the corn is cooked.
Remove the Corn:
Once the corn is tender, take it out promptly to avoid overcooking, which can affect its taste.
Continue Simmering the Chicken:
Let the chicken continue to cook on low heat until fully tender.
Remove the corn at the right time to retain its fresh and sweet flavor. Overcooking can impact the corn's texture and taste.
For the best flavor, use a yellow farm-raised chicken for the soup (referred to as "Gele Kip").
Add MSG and salt during cooking rather than at the end to ensure the chicken and corn absorb the flavors.
If you plan to make hot pot, you can substitute water with coconut water and skip blanching the chicken; simply skim off any foam that rises to the surface.

拆鸡:首先要拆鸡。拆鸡的第一步(也是关键步骤)是把许愿骨拆下来,然后就可以拆腿、拆翅膀。接着拆鸡胸肉,之后就留个鸡骨架。
焯鸡肉:先用开水加料酒再加姜去焯鸡肉两分钟。用的是开水沸水焯。焯完之后,倒掉热水,立即去放到冷水里去。
炖汤:接着加玉米、胡萝卜、姜片开始炖。加入盐和味精调味。炖上半个多小时之后玉米就熟了。
取出玉米:玉米熟后要早点拿出来,不然放久了就不好吃了。
继续炖鸡:鸡可以继续炖(小火)直至熟透。
记得在合适的时候捞出玉米来保证玉米的新鲜和甜度,否则玉米的口感和味道会受到影响。

不要在最后才加入味精和盐,不然鸡肉和玉米会没啥味道。
