Corn Chicken Soup

Ingredients

Instructions
Prepare the Chicken Traditionally, you break down a whole chicken: first remove the wishbone, then the legs, wings, and breast meat, leaving the carcass to chop into small pieces (<3cm).
2025-09-13 Update → Actually, it’s much easier to just use chicken drumsticks. Chop them into smaller pieces for the soup. For example, AH free-range chicken drumsticks / AH Scharrel kippenbouten work really well — cheap, convenient, and tasty! Just make sure to use a cleaver that can cut through bones.
Blanch the Chicken In a pot of boiling water, add cooking wine and ginger, then blanch the chicken pieces for 2 minutes. Discard the hot water and immediately transfer the chicken into cold water.
Alternatively, you can bring the water just to a boil and gently let the white foam rise, skimming it off with a ladle.
Cooked Simmer the Soup Add corn, carrots, and ginger slices along with the blanched chicken. Season with 15g salt and 1g MSG. Keep the heat very low — hot but not boiling — and simmer for 20 minutes. At this point, the chicken and corn are already cooked and can be eaten.
Continue Simmering Carrots may need longer to soften fully. Continue simmering for another 20 minutes until the carrots are tender and sweet. Then serve!
Notes
Remove the corn at the right time to keep its freshness and sweetness; overcooking affects the taste and texture.
Ideally, use a yellow farm-raised chicken (Gele Kip). However, in practice, AH free-range chicken drumsticks work perfectly, taste great, and are cheaper.
Add MSG and salt during cooking, not at the end, so the chicken and corn absorb the flavor.
If you’re making hot pot instead, you can replace the water with coconut water. In that case, no need to blanch — just skim off the foam.

步骤
拆鸡:先拆鸡。拆鸡的第一步(也是关键步骤)是把许愿骨拆下来,然后就可以拆腿、拆翅膀。接着拆鸡胸肉,之后就留个鸡骨架。剁成小块(3cm 以下)

焯鸡肉:先用开水加料酒再加姜去焯鸡肉两分钟。用的是开水沸水焯。焯完之后,倒掉热水,立即去放到冷水里去。
也可以用恰好刚刚沸腾的火力把白色泡沫慢慢煮出来,再用漏勺挑掉。
Cooked 炖汤:接着加玉米、胡萝卜、姜片开始炖。加入盐(15g)和味精(1g)调味。用最小的恰好不沸腾的火,炖上20分钟。这时候鸡肉和玉米就熟了,可以先吃。
继续炖:胡萝卜可能还需要炖久一点,可以再炖20分钟,胡萝卜也会变得软糯,这时候就可以完全盛出来吃了!
注意事项
记得在合适的时候捞出玉米来保证玉米的新鲜和甜度,否则玉米的口感和味道会受到影响。
要买黄黄的农场谷饲鸡来煲汤。Gele Kip! 但我后来实测🔗链接 这种 AH free-range chicken drumsticks/AH Scharrel kippenbouten 也很好吃,还更便宜!
不要在最后才加入味精和盐,不然鸡肉和玉米会没啥味道。
如果你打算做火锅的话,可以把水换成椰子水,也不用焯水了——只需要撇去浮沫就好!
