Chicken: cubed
Dried chili peppers: chopped
Sichuan peppercorns: to taste
Garlic: sliced
Ginger: sliced
Onion: chopped
Green pepper: chopped
Red pepper: chopped
Cooking oil
Doubanjiang (spicy bean paste)
Fermented black beans
Oyster sauce
Dark soy sauce
Sugar
Water (boiling water)
Cube the chicken and set aside.
Chop dried chili peppers, slice garlic and ginger.
Chop the vegetables like onion, green pepper, and red pepper, and set aside.
Heat oil in a pan until very hot (200C).
Add garlic and ginger slices, stir-fry quickly to release their aroma.
Add dried chili peppers and Sichuan peppercorns, stir-fry, being careful not to burn them.
Add the chicken cubes, stir-fry until the chicken turns golden brown.
Add the chopped onion, green pepper, and red pepper, stir-fry until well combined.
Add doubanjiang and fermented black beans, stir-fry until well combined.
Add oyster sauce, dark soy sauce, and sugar to taste.
Pour in enough boiling water to cover the chicken.
Reduce the heat and simmer for about 10 minutes to allow the chicken to absorb the flavors.
Increase the heat to reduce the sauce until it thickens.
Adjust the seasoning with a bit more sugar if needed before serving.
Garnish with sliced scallions and chili rings if desired.
