Ingredients

Main Dish Ingredients:

  • Chicken: cubed

  • Dried chili peppers: chopped

  • Sichuan peppercorns: to taste

  • Garlic: sliced

  • Ginger: sliced

  • Onion: chopped

  • Green pepper: chopped

  • Red pepper: chopped

Seasonings:

  • Cooking oil

  • Doubanjiang (spicy bean paste)

  • Fermented black beans

  • Oyster sauce

  • Dark soy sauce

  • Sugar

  • Water (boiling water)

Instructions

Preparation:

  1. Cube the chicken and set aside.

  2. Chop dried chili peppers, slice garlic and ginger.

  3. Chop the vegetables like onion, green pepper, and red pepper, and set aside.

Cooking:

  1. Heat oil in a pan until very hot (200C).

  2. Add garlic and ginger slices, stir-fry quickly to release their aroma.

  3. Add dried chili peppers and Sichuan peppercorns, stir-fry, being careful not to burn them.

  4. Add the chicken cubes, stir-fry until the chicken turns golden brown.

Adding Vegetables and Seasoning:

  1. Add the chopped onion, green pepper, and red pepper, stir-fry until well combined.

  2. Add doubanjiang and fermented black beans, stir-fry until well combined.

  3. Add oyster sauce, dark soy sauce, and sugar to taste.

  4. Pour in enough boiling water to cover the chicken.

Simmering:

  1. Reduce the heat and simmer for about 10 minutes to allow the chicken to absorb the flavors.

Finalizing the Dish:

  1. Increase the heat to reduce the sauce until it thickens.

  2. Adjust the seasoning with a bit more sugar if needed before serving.

  3. Garnish with sliced scallions and chili rings if desired.
