Spicy Stewed Chicken with Potatoes Recipe
1 whole chicken or chicken drumsticks (deboned)
Potatoes (mashed)
Oil
Sichuan peppercorns
Star anise
Garlic
Sichuan chili sauce (either just spicy or spicy-numbing)
Soy sauce (regular and dark soy sauce)
Salt (10g)

Prepare the Chicken: First, pan-fry the chicken until it turns golden brown and crispy. Make sure to evaporate any excess moisture from the chicken skin.
Add Spices: Add some oil to the pan along with Sichuan peppercorns, star anise, and garlic. Stir-fry until fragrant.
Add Potatoes: Mash the potatoes ahead of time. Then, mix the mashed potatoes with the chicken and spices in the pan.
Add Chili Sauce: Add Sichuan chili sauce (either just spicy or spicy-numbing, depending on preference) and continue to stir the mixture together.
Stew the Dish: Add regular soy sauce, dark soy sauce, and about 10 grams of salt to taste. Pour in enough water to cover the ingredients and stew everything together until the chicken is fully cooked and tender.
Serving: The dish is ready once the chicken is tender and flavorful. For best results, use deboned chicken drumsticks or a whole deboned chicken instead of pre-cut meat chunks.
Using deboned chicken drumsticks or a whole deboned chicken provides better texture and flavor compared to using pre-cut chicken pieces.
