Coconut Chicken Hotpot Recipe

Ingredients

  • 1-2 liters of Vita Coco coconut water (one or two bottles)

  • 1-2 ears of corn

  • 2 slices of ginger

  • 1 stalk of green onion (about 10 cm, cut into 2-3 pieces)

  • Sweet soy sauce (for dipping)

  • Vegetables for later (spinach, Chinese cabbage, or any other vegetables of your choice)

Instructions

  1. Prepare the Broth: Start by boiling a pot and adding the coconut water. Then add the green onion and ginger slices.

  2. Cook the Corn: Add the corn to the boiling coconut water and let it simmer for a few minutes.

  3. Add the Chicken: Cut the chicken into small pieces and add it to the pot. Let it cook until the chicken is done.

  4. First Round: Once the chicken is cooked, it's ready to eat. Enjoy the first round of chicken and broth.

  5. Second Round: After finishing the first round, you can add more chicken to the pot for the second round. You can also add meat slices after the chicken, if desired.

  6. Vegetables: Once the second round of chicken is done, add your choice of vegetables (spinach, Chinese cabbage, or any other vegetables).

  7. Serve: Serve with sweet soy sauce as a dipping sauce.

Tip

  • You can adjust the ingredients according to your preferences and add more meat or vegetables as you go along.

  • Chicken is quite important - try to find the yellowest chicken you can reach!
