Sauerkraut Chicken Pot 酸菜鸡公煲

Sauerkraut Chicken Pot

Ingredients

Main Ingredients:

  • 1 whole chicken

  • Salt

  • Sugar

  • Sauerkraut

  • Potatoes (optional)

Seasonings:

  • Pixian Doubanjiang (fermented broad bean paste)

  • Soy sauce (2 tablespoons)

  • Oyster sauce (1 tablespoon)

  • Five-spice powder

  • Black pepper powder

  • Vinegar (a little)

  • Sugar (a little)

  • Water (appropriate amount)

  • Chili peppers

  • Sichuan peppercorns

Instructions

Preparation:

  1. Marinate the Chicken: Rub the chicken with salt and sugar, and let it sit for a while to absorb the flavors.

  2. Prepare Ingredients: Cut the sauerkraut into suitable pieces, and chop the potatoes into chunks if using.

Cooking Steps:

  1. Stir-fry the Chicken: Place the marinated chicken in a pan and stir-fry until it is half-cooked. Remove and set aside.

  2. Stir-fry the Seasonings: Add a little oil to the pan, then add Pixian Doubanjiang and stir-fry until fragrant. You can add chili peppers and Sichuan peppercorns for extra flavor and stir-fry them together.

  3. Add Sauerkraut: Put the sauerkraut into the pan and stir-fry it with the Doubanjiang.

  4. Add Chicken: Return the half-cooked chicken to the pan and continue to stir-fry for a while.

  5. Add Water and Simmer: Pour in an appropriate amount of water, then add soy sauce, oyster sauce, five-spice powder, black pepper powder, a little vinegar, and sugar. Add the chopped potatoes if using.

  6. Simmer: Cover the pan and simmer over low heat for 15 minutes, ensuring the chicken and potatoes are fully cooked and flavored.

Finishing:

  1. Serve: Once done, check the taste and adjust the seasoning if necessary (add salt if needed). Serve hot and enjoy your sauerkraut chicken pot!
